Fireworks and Appetizers

Since a holiday weekend is coming up, it's time to start thinking about family, friends and fireworks! And with family and friends over, you need some appetizers while you're watching the star-spangled show!

Here is something quick and easy-Southwest Chicken Cups!!

Here is the ingredient list for mom's Southwest chicken cups:

1 package of cream cheese
1 bag of Tostitos scoops
1 jar of salsa
1 bag of cheese (taco mix works best)
shredded chicken
corn (optional)
black beans (optional)



Preheat the oven to 350 degrees. Mix together the salsa and cream cheese. Place the "scoops" on a cookie sheet and put a small dollop of the cream cheese and salsa mixture in each scoop. Put a little chicken in each one, along with a little corn and a few beans. Then top off with a pinch of  cheese. Cook in the oven for 10 minutes.



These are great appetizers! They are so easy and so good. Appetizers are best when they are bite-size and these definitely fit the bill!

Have a theme for your fourth of July party. We went with a Southwest theme to go with our chicken cups. Just a few accessories and your party becomes more festive, cohesive and fun!!
