Tasty and Easy Shrimp Wanton Cups

With Labor Day fast approaching, I thought we should do a tasty appetizer that can be served to guests at any weekend party!  These shrimp wanton cups are easy and tasty, and they look great!!


Here is your ingredient list:
  • 1/2 lb. cooked shrimp, chopped
  • 1 cup real mayonnaise
  • 1 cup (4 oz.) shredded Swiss cheese
  • 1/3 cup chopped scallions
  • 1 Tbsp. lemon juice
  • 1 1/2 tsp. dill weed
  • dash of Tabasco
  • 42 slices of party rye or wanton cups

First let's preheat our oven to 375 degrees.

Now we can make our wanton cups:

Brush each wanton wrapper with a little vegetable oil then nestle it down into one of the cups of a 24-cup nonstick mini muffin tin.  Transfer to the oven and bake until golden brown and crisp, about 6 minutes.

 
 

The shrimp filling is next:
 
In medium bowl, mix shrimp, mayo, cheese, scallions, lemon juice, dill & Tabasco.


Raise the temp of the oven to 450 degrees.

Grease cookie sheet.  Arrange slices of party rye (if that's what you're using) in a single layer and top each slice with about 1 Tbls. of shrimp mixture, or fill baked wanton cups.  Bake until topping is golden and bubbly, about 8-10 minutes.
